Winter Management
Winter shiitake mushrooms typically appear between December and the following February. This is the prime production period for medium-to-low temperature strains; the mushrooms are of the highest quality and command high market prices. Management during this period focuses on maintaining moisture and warmth, as well as protecting against cold and freezing temperatures. Roof coverings should be appropriately thinned to allow sunlight to penetrate the growing area, thereby increasing heat sources, raising the temperature of the mushroom beds, and promoting the smooth formation of mushroom buds. Mushroom bags that have become light in weight require rehydration or water injection to adjust their moisture content and maintain optimal humidity. The plastic sheeting on the mushroom shed must be tightly sealed; simultaneously, the frequency and duration of ventilation should be reduced to prevent direct exposure to harsh external weather conditions. During the coldest part of winter, if facilities allow, greenhouse steam heating can be used to induce budding; this produces pearl-like buds and yields significant economic benefits.
Spring Management
Spring mushrooms appear between March and early June. As the climate is dry and windy with significant temperature fluctuations, careful control of temperature and humidity is essential. Management during the spring fruiting period should focus on the following three points:
First, following the autumn fruiting and wintering periods, the mushroom bags have lost significant moisture and lack sufficient water; furthermore, mycelial growth is less vigorous than in autumn. Consequently, the management priority is rehydrating the bags. Simultaneously, by rehydrating the bags and lowering the relative humidity of the air, the moisture differential on the bag surface is artificially increased to stimulate mushroom bud formation.
Second, strengthen ventilation: This involves maintaining warmth to nurture the mycelium after rehydration. During this period, ventilate once or twice daily for 1 to 2 hours each time; ventilation duration may be extended appropriately during overcast or rainy days.
Third, in early spring, pay attention to maintaining and increasing warmth while ensuring appropriate ventilation. Generally, ventilation should be performed after watering; the duration must be controlled to prevent temperature and humidity from dropping beyond optimal ranges. After rehydrating the bags, the temperature differential should be appropriately widened—for instance, by lifting the plastic sheeting—to trigger a transition in the mycelium from the vegetative growth stage back to the reproductive growth stage, thereby inducing the formation of more mushroom buds.
