What should be paid attention to in the preservation and packaging of King Oyster Mushroom in the factory?

Compared with other mushrooms, King Oyster Mushroom is a kind of mushroom that can be kept for a long time at room temperature. It can be kept for about 5 days in a ventilated place at a natural temperature below 16℃. Basidiospores begin to eject after 5 days, and the cap turns yellow on the 7th day, and then deteriorates. Therefore, it is generally advisable to store it for 4 days at a room temperature below 16℃ in winter. The cap is required to roll inward, and attention should be paid to ventilation conditions. If the temperature is 4~6℃, it can be stored for 10 days in a fresh-keeping box.
The relative humidity in the space of King Oyster Mushroom cultivation room is relatively high, and the water content of fresh mushrooms is relatively high. In order to extend the shelf life, it is pre-cooled at 1~5℃ for 12h after harvesting, and the temperature of the packaging room is 15℃. When packaging, the mushroom feet are cut off, decomposed according to size and quality, weighed, and quantitatively vacuum-packed. Different specifications of packaging boxes are used for packaging of mushrooms of different grades, and plastic ropes of different colors are used to tie the mouth. Fresh mushrooms can be packed immediately after packaging. The foam box must be cooled before sealing to extend the shelf life. After vacuum packaging, it can be stored at 4℃ for 10-15 days.
