What should we pay attention to when harvesting and drying black fungus?
Harvest Standards
Harvest when the mushroom caps are fully open, the base shrinks, color lightens, edges spread out, the flesh is thick, and white spore powder appears on the underside. Stop watering 1–2 days before harvest to let the base shrink. Harvest on sunny days after rain or in the early morning on clear days. For spring and autumn harvests, pick large mushrooms and leave small ones. Harvest frequency in Northeast China depends on management and mushroom variety.
Drying Mushrooms
First, remove all substrate from the base of the mushrooms. Then spread the mushrooms evenly on nylon mesh for drying. During drying, turn them frequently to ensure even dehydration. When mushrooms are about 50–60% dry, gather them into piles 8–10 cm thick to dry slowly, turning multiple times daily. After 7–10 days, they are fully dry. This method produces thick, well-shaped mushrooms with a high dry-to-fresh ratio. On sunny days, mushrooms can reach suitable dryness in 1–2 days. Avoid random flipping during drying to prevent curling and maintain quality.
When using drying machines, keep the temperature below 40°C to avoid burning. After drying, store mushrooms in thick plastic bags with tight seals. Label the bags clearly with grade information. Finally, keep the packaged mushrooms refrigerated to preserve quality and shelf life.
