Bottle-cultivated enoki mushroom cultivation is roughly divided into single-zone system and multi-zone system.

The induction of budding, inhibition, and fruiting are carried out in the same warehouse, which is called "single-zone system";

The whole process of fruiting is cultivated, moved, and inhibited under different temperature cultivation environments to complete fruiting, which is called "multi-zone system".

The fruiting stage is divided into four stages: budding, uniform cultivation, inhibition, and growth.
Process flow: After scratching the fungus, use the automatic racking machine to put it on the shelf - move it to the germination room - uniform cultivation room - inhibition room - inhibition room - move it to the set room after inhibition, automatically put it on the shelf - move it to the growth room - move it to the packaging room before harvesting - automatically take it off the shelf - tear off the mushroom sheet → harvesting - packaging.

1. Bud-inducing stage
On the 1st to 10th day, the temperature is 13~15℃, the relative humidity of the air is 85%~90%, the carbon dioxide concentration is 0.2%~0.3%, and the light is appropriate.


When the mycelium of Flammulina velutipes fills the entire bottle, it indicates that the physiological growth period of the mycelium of Flammulina velutipes has ended, and it is necessary to provide appropriate external environmental conditions to stimulate it to change from vegetative growth to reproductive growth.

After the mycelium is over, the mycelium should be scratched immediately and moved to the bud-inducing room to manage the four environmental factors of temperature, humidity, ventilation, and light. Generally, after 4~5 days, white cotton wool aerial mycelium will appear on the surface of the culture medium (if the surface of the culture medium has light brown to brown, it means that the culture medium has been contaminated by bacteria), and then transparent and nearly colorless water droplets will appear.

After 7~8 days, you can see the fish-like mushroom buds growing all over the surface of the material, and about 10 days, you can see the embryonic form of the fruiting body, and the bud-inducing is over.

(1) Scratching
Enoki mushrooms have the characteristic of forming fruiting bodies on new mycelium. Based on this, the domestic bottle cultivation of Enoki mushrooms currently uses the scratching method. Since the heat released by the growth of mycelium will cause the surface water to evaporate, the surface mycelium will age, and even form a harder mycelium skin or mycelium film, which will prevent fresh air from contacting the internal mycelium, which will prolong the fruiting time and make the fruiting uneven.

Therefore, when the mycelium is physiologically mature, a negative ion mechanical scratching is used to remove the inoculated block on the surface of the cultivation material and the old mycelium layer. The development of the mushroom buds is better, the mushroom buds are neat, and the appearance is ideal. The operation process of the scratching machine includes opening the lid, rotating, scratching, rinsing, and closing the lid. The specific points are as follows.

After the mycelium fills the bottle, it is transferred to the wall culture room with a certain humidity and temperature for scratching . The scratching machine first opens the bottle cap, then puts the box on the rotating operating table and rotates it 180", removes the aged bacteria on the surface of the bottle mouth, and the scratching depth is about 0.5em, exposing the new culture medium, and finally flattens the exposed new culture medium surface.

After scratching, rinse the debris on the surface of the culture medium with clean water, then rotate the cultivation bottle 180, add appropriate water and detach it from the scratching machine, arrange it on the cart with a conveyor, and the workers neatly stack the fruiting baskets on the fruiting racks. During the scratching process, according to the specific situation, the scratching tools should be disinfected regularly with an alcohol blowtorch.
