Overview of white button mushroom spawn seeding, three-stage fermentation and discharge

1. Seeding

(1) Hygiene management: All equipment, ground and space in the seeding workshop need to be thoroughly cleaned, washed and disinfected before seeding.
Seeding hygiene is the most important and strict process in the fermentation plant.

(2) Seeding method: Solid spawn, usually spawn with millet, sorghum and wheat as the matrix, is evenly mixed into the secondary fermentation material, with a seeding ratio of about 0.5%. Due to the difference in the particle size of the spawn matrix, the number of particles of millet spawn and dry wheat spawn of the same weight of spawn is about 5 times different, so the spawn can be used about 15% less.

2. Three-stage fermentation
(1) After the pile is seeded, it is filled into the tunnel again for temperature control and fungus cultivation.

(2) About 9 days before seeding, because the amount of mycelium is small, the temperature should be controlled at a relatively low level of about 24℃ to avoid the growth of miscellaneous bacteria caused by high temperature. During this process, the ventilation volume is usually small and the pile is not active. The mycelium growth in the first 7 days accounts for about 25% of the total pile.

(3) After 9 days, the mycelium begins to grow in large quantities. After 10-15 days, the mycelium will occupy 10%-20% of the pile space every day. This process will generate a lot of temperature and require a lot of oxygen.

3. Discharging
After the tertiary material is full of mycelium, it is dragged out by a trawler, loaded into a vehicle through a conveyor belt, and transported to the client to be loaded into the mushroom house for mushroom cultivation.

(1) Before discharging, the temperature of the pile needs to be lowered to below 20℃, and even below 17℃ in summer to avoid high temperature burning of the mushroom house.

(2) During the transportation process, mushroom yield enhancers can be evenly added to the pile to increase the organic protein content of the pile and improve the quality of mushroom production.

(3) If the pile is too dry, clean water can be added to replenish moisture.

What are the advantages of using tunnel grille ventilation for tertiary fermentation?
(1) The opening area of the tunnel grille ventilation floor is about 30%, which can meet the oxygen demand of the pile required for secondary fermentation, can meet the pile degree control, and can be fermented on a large scale.

(2) The tunnel grille plate is ventilated and enters the pile through the small holes of the mesh cloth. The air intake is particularly uniform, avoiding possible local anaerobic problems.

(3) After fermentation, the mesh cloth and the pile can be pulled out by a machine for sowing, realizing full equipment operation, reducing the probability of contamination during sowing, and making it safer.

(4) When the pile heats up sharply in the late stage of sowing, sufficient ventilation and cooling are provided to achieve large-scale fungus removal.

(5) The three-stage material removed by fungus removal can be evenly added with high-protein yield-increasing agents to increase yield. Water can be evenly added to better increase mushroom yield.
